Colson’s Restaurant, located within Hotel Indigo Exeter, has announced the appointment of new Head Chef Charlotte Vincent, who appeared on BBC2's Great British Menu in 2022.
Raised in Exeter, Charlotte joined the Royal Logistics Corp of the British Army, before a role as pastry chef at Michael Caines at Gidleigh Park, moving to The Royal Clarence Hotel in the same capacity. She took over at The Five Bells in Devon three years ago, earning the pub a place in the UK’s Top 50 Gastropubs.
Charlotte has previously cooked for former Prime Minister Boris Johnson at Number 10 Downing Street and was one of the Great British Chefs to watch in 2022. She was also a finalist in the 2022 National Chef of the Year and competed in Great British Menu 2023. Charlotte has also won three rosettes for food and won recognition from Michelin Bib Gourmand.
Owned by Hotel Exe Limited and operated by Castlebridge Hospitality, Colson’s and Hotel Indigo Exeter opened in December 2022 having been restored and converted from the iconic former House of Fraser department store. The history of the building dates back to 1792 when Mrs Colson, a local milliner who became one of the city’s most loved characters, opened a department store there named ‘Colson’s’.
